Light and Lovely Chicken Cordon Bleu

Directions:

Place each chicken breast between 2 sheets of waxed paper. Flatten to 1/4 ince thickness, using a meat mallet. Sprinkle each fillet with parsley. Place 1 slice of ham and 1 slike of cheese in the center of each chicken piece. Sprinkle centers with the parsley. roll up lengthwise and secure with wooden toothpicks.

Coating the Cordon Bleu:

Combine bread crumbs, paprika, salt and pepper. Dip each rolled chicken breast iin egg/milk mixture then roll in bread crumb mixture. Place chicken in a 12x8x2 inch baking dish coated with cooking spray. Bake uncovered at 350 degrees for 30 - 45 minutes or until meat thermometer reaches 160 degrees. Serves 8.
